Open-Face Mini BLTS

1/3 cup reduced-fat mayonnaise
2 tablespoons finely chopped fresh basil
1/4 teaspoon black pepper
4 whole grain English Muffins
2 large romaine lettuce leaves
2 plum tomatoes, sliced
8 slices turkey bacon, cooked crisp (Oscar Meyer makes the best we’ve tasted so far)

1. Stir together mayonnaise, basil and pepper in small bowl.

2. Spread one side of each muffin evenly with mayonnaise mixture. Top with lettuce, tomatoes and bacon.

Served with steak fries.

Results: I know, I know…”Thanks for telling us how to make a BLT, Michelle.” I’m only putting this on here because the addition of the basil to the mayo was so tasty. And for the record, even Steven liked these. Without the basil. And tomato. And lettuce. And with adding cheese. Henry asked for one for lunch the next day.
